Boil the beef in salted water until tender. Fry the onion in oil, add whole pepper, allspice and bay leaf. Add the tomato paste to the semi-dark base, fry, add the crushed tomatoes and pour the broth from the meat. Stir and thicken with the roux. Cook slowly for at least an hour. Strain the sauce, add the ground cinnamon, lemon zest, vinegar and gingerbread. Season with salt, sugar and white wine. Finish with butter. Serve with a slice of beef.
